Yellowfin Tuna Steak over Brown Rice Vegetable Medley

  1. Pat yellowfin dry and heavily salt it. Marinade in 2 tablespoons of olive oil. Add copius black pepper after the steak is coated. Cover and refrigerate for 30 minutes.
  2. Use a strainer to rinse the brown rice. Rinse until the water is clear.
  3. In a rice cooker place brown rice, 2 cups of water, 2 tablespoons of olive oil, corn, peas, minced garlic, chili powder, red pepper flakes, salt, pepper, and onion powder. Stir. Allow to cook for approximately 50 minutes.
  4. When the rice is about 20 minutes away from done, line a pan with canola oil and get it very hot - the goal is to get a good sear.
  5. While the pan is heating, coat the tuna with paprika, more salt, pepper, and garlic salt.
  6. Place tuna in pan. Cook for approximately 3 minutes on all sides, especially if it is thick and has 4 sides.
  7. Reduce heat to low, sprinkle drops of lemon juice, and cover. Cook for 3-6 minutes more. Remove from heat covered and allow to rest 5 minutes more.
  8. When the rice is almost cook mix in fresh spinach and allow to cook/warm until spinach is wilted.
  9. Slice yellowfin and serve over the rice vegetable medley.

Chef's Notes

Yellowfin tuna can be eaten medium. If you prefer this to well done skip the covered cook at the end and simply allow to rest after the sear.
