Southern Bacon Black Beans and Rice

Instructions

  1. Cut bacon into bites
  2. In a large skillet with lid, cook bacon bites until somewhat crispy.
  3. Add diced tomatoes, chicken stock, and spices to the skillet.
  4. Distribute 1 cup of rice around the skillet and bring to a simmer. Stir every few minutes for 15 minutes.
  5. Add black beans and corn to the skillet. Stir until evenly distributed. Allow an additional 5 minutes to make sure the dish is well heated.
