Pulled Pork

  1. Butcher pork so it fits in the crock pot and place in pot fat cap facing upwards
  2. Perforate the fat cap of the pork with a sharp knife. Ideally the entire fat cap is covered in perforations.
  3. In a bowl combine brown sugar, coffee grounds, and spices. Mix thoroughly until the mixture is evenly distributed.
  4. Using a spoon distribute the spice mixture over top of the fat cap completely covering it. Rub in the spice mixture pressing it down into the fat and its perforations.
  5. Pour enough apple juice in the pot to cover parts of the pork under the spice rub.
  6. With no bone cook on high for 6-7 hours. With a bone cook on high for 9-10 hours. The pork is ready when the meat is tender enough you can easily pull it apart with forks.
  7. Drain any excessive amounts of liquid.
  8. Pour BBQ sauce over the pork and mix it while pulling it apart with forks. Make sure the pork is completely covered in BBQ sauce and pulled apart into fine shreds.
  9. Serve with sides or make a sandwich with buns and cheese. Enjoy lots of tasty pulled pork.
