Put Chuck Roast in crock pot. Perforate the top with a sharp knife. Ideally the entire top is covered in perforations
In a bowl mix the coffee grounds and spices. Mix thoroughly.
Pour the apple juice into the crock pot followed by the apple cider vinegar. Ideally the liquid level is under the top of the roast.
With a spoon distribute spice mix evenly across the top of the roast. Use the spoon to tamp the spices into the perforations.
Cut half stick of butter into small squares. Distribute evenly over the top of the spices.
Cook on high for 6-7 hours.
Drain any excess amount of liquids. Use a small amount to make a gravy if desired. It's best to spoon off the top as the grounds and spices can make a gravy grainy.
Lift the tender beef into a bowl using tongs. Take 2 forks and pull the beef until the entire roast is shredded.
Serve with sides or make a sandwich with buns and cheese. Optionally add bbq sauce instead of gravy for a slightly different taste.
