Hot Italian Sausage Gravy and Pasta

  1. In a large sauce pot, put tomatoes, spices, and honey. Mix well with a wooden spoon.
  2. Place pot on stove top over medium to medium-high heat. Bring mixture to a bubble.
  3. Reduce the heat to low and put a lid on it to simmer.
  4. Coat the bottom of the pan with a somewhat thin layer of extra virgin olive oil. Put over medium to medium-high heat. The oil should not be popping, if it does turn it down.
  5. When the oil is heated gently place the sausages into the pan. Brown sausages on all sides.
  6. When the sausage is browned and mostly cooked, put the pan drippings and sausage into our pot of tomato sauce. Mix well and replace lid.
  7. Simmer on low for 5-6 hours. Stir occasionally to prevent burning.
  8. When getting ready to serve, boil the desired pasta for the suggested amount of time, strain, toss in sauce, and serve with sausage. Don't forget to salt the pasta water!
