Cut chicken breast into small 1 inch or less pieces. Consistent sizing will keep the large pieces from coming out undercooked.
Get 3 bowls. One for breading, one for water, and one for finished chicken. Keep the deep frier basket in the frier do not load it directly.
In one of the bowls put flour and spices. Mix thoroughly. Don't under spice. The batter will be fried and lose lots of its potency.
One piece at a time dip chicken into the bowl of water, then the breading bowl to cover a layer (spoon helps). Then dip breaded nugget back into the water, and then back into the flour bowl for a second coating. Place finished nugget in breading bowl.
When deep fryer is at 375° carefully put nuggets into the frier. Use a slotted wooden spoon and lower them gently. Fry for 3-4 minutes.
Take the basket out of the frier and allow nuggets to rest for at least 5 minutes.
Put the basket back in the frier to double fry them for another 3-4 minutes. Already fried nuggets shouldn't stick to the basket so you don't need the spoon this time.
