  1. Get a pan with canola oil hot enough for the oil to shimmer
  2. Completely dry fillets with a paper towel.
  3. Combine flour and black pepper on a plate. Coat both sides of the fillets.
  4. In a medium bowl scramble large egg. Dip each side of the fillets in egg wash.
  5. Put Panko crumbs on plate. Coat both sides of the fillets.
  6. Cook fillets 3 minutes on one side, 2 minutes on the other.
  7. Serve with your favorite condiments.
