Cheesy Chicken Salsa Bake

16 (oz) Medium Salsa

2 Bell Peppers
2 (tbsp)s Olive Oil
90 Grams Fresh Spinach
2 (C)s Mozzarella

(tsp) Italian Seasoning
Instructions
Cut chicken breasts into bite sized pieces. Cook chicken on skillet until cooked through.
Chop and dice onion, bell peppers, and spinach
In a 10" oven safe skillet (cast iron works well), cook garlic and onion in the olive oil for 1-2 minutes. Stir to avoid burning.
Add spinach and peppers. Cook until spinach is wilted.
Add salsa and seasonings. Allow to simmer until it is heated through.
Mix in cooked chicken and top with mozzarella.
Bake at 475° for 15 minutes or until the cheese starts to brown and liquid is bubbly.
Serve with rice or tortilla chips.
